For the batter: 2 tbsp coconut oil, 16 g ground flax seeds, 100 g flour, 1 tsp baking powder, 200 ml almond milk, 2 tbsp maple syrup, 1 tsp vanilla powder
Açai Berry Jam: 1 pack frozen açaí (100g), 50 g frozen blueberries , 50 g frozen raspberries, 2 tbsp maple syrup , 2 tbsp chia seeds
Topping: Coconut yogurt, Açaí banana chips, Fresh strawberries and/or blueberries
Pre-heat the oven to 200 C and place a pan in it. You’ll be baking in it as well, so it pre-heats. Add the coconut oil in the pan few minutes before pouring in the batter. Pour the remaining Dutch baby ingredients in a blender and blend till combined. Pour into a sizzling pan and bake for 30-35 mins.
For the jam, put all the berries in a pot with the açai and maple syrup, bring to the boil and simmer for a few minutes. Then put the jam in a blender and blend until uniform. Stir in the chia seeds and set aside.
After baking the Dutch Baby, decorate with coconut yoghurt, the jam and with fresh berries. Add the banana chips for an extra crunch.
